Lunch
Sauteed garlic and carrots in a saucepan before adding two cups of this premade butternut squash soup, quinoa, and left over zucchini. Brought to a boil and simmered until the quinoa was cooked. The soup is a little too sweet on its own which is why I threw in a few other ingredients.
Sprinkled with green onions
Dried cranberries and sliced almonds on the side since I'm trying to eat more nuts.
